Scrambled eggs, pan roasted tomato and baby spinach

This dish makes a delicious paleo diet breakfast meal and is quite simple and easy to make. Try it, you will love it.

Ingredients

Serves 1

3 eggs- cracked and whisked in a bowl

1 tomato, halved or quatered

a generous handful of baby spinach leaves

olive oil for cooking

Cooking Method

Place a small amount of olive oil in pan, and pan fry tomato until golden brown and soft but not too squishy. Remove from pan and place on your plate. Place a small amount of olive oil in pan and scramble eggs. Remove from pan and place on your plate. Throw the baby spinach leaves in the pan for just a minute or 2 to blanch lightly. Remove from pan and place on your plate. Your paleo diet breakfast is now ready to eat.
