Lamb Rosemary Sausage Hotpot

I cooked up this delicious paleo breakfast the other morning and I had a few requests to share the recipe so here goes. I hope you enjoy it as much as I did
Lamb Rosemary Sausage Hotpot
Serves 2
Ingredients
3 rosemary lamb sausages
2 large mushrooms -halved
2 roma tomatoes -halved
3 slices bacon -halved
4 eggs – beaten
olive oil
Cooking method
1. Preheat oven to 390°F (200°C)
2. Place a small amount of oil in pan and swirl to coat a small rectangular baking dish
3. Cut one of the sausage in half and then place those in the pan and cook for 12 minutes
4. Add the bacon, tomato and mushroom, making sure to distribute it evenly so when you serve it; it can be divided in 2
5. Cook for a further 10 minutes
6. Remove from oven and pour egg into dish, making sure to pour it over the ingredients
7. Cook for 10 minutes then remove from oven, slice in 2 and serve ☺
